Creamy Burrata Pasta for Connoisseurs

  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1 teaspoon red pepper flakes (optional, for heat)
  • 2 cups cherry tomatoes, halved
  • ½ cup vegetable or chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • Salt and black pepper, to taste
  • 8 ounces fresh burrata cheese (2 small balls or 1 large ball)
  • Fresh basil leaves
  • Additional Parmesan cheese
  • Lemon zest (optional, for brightness)

Instructions

  1. Begin by cooking the pasta in a large pot of salted water. Cook according to package instructions until al dente (usually between 8-10 minutes), stirring occasionally to prevent sticking.
  2. While the pasta cooks, heat 2 tablespoons of olive oil in a large pan over medium heat. Add the 3 minced garlic cloves and sauté for about 1-2 minutes until golden brown, being careful not to burn the garlic as it can become bitter.
  3. Add the 2 cups of halved cherry tomatoes to the pan and cook for about 5-7 minutes until they soften and release their juices.
  4. Pour in ½ cup of vegetable or chicken broth and let the mixture simmer for 2-3 minutes to meld the flavors, stirring occasionally.
  5. Reduce the heat and pour in 1 cup of heavy cream. Stir the mixture well and let it simmer lightly for 2-3 minutes until it thickens slightly.
  6. Now add the ½ cup of grated Parmesan cheese. Stir until fully melted and the sauce is creamy. Season with salt, pepper, and optional red pepper flakes to taste.
  7. Once the pasta is ready, drain it and add it directly to the pan with the sauce. Toss everything thoroughly until the pasta is evenly coated with the sauce.
  8. Serve the pasta immediately and break the burrata over the top. The burrata should melt slightly when cut. Garnish the dish with fresh basil leaves and additional Parmesan if desired.
