Creamy Shrimp Spaghetti Delight

  • 400 g Spaghetti
  • 300 g Shrimp (peeled and deveined)
  • 200 g Cream cheese (plain or with herbs)
  • 2 Garlic cloves, finely chopped
  • 1 small Onion, finely diced
  • 150 ml Vegetable broth
  • 100 ml Cream (optional for extra creaminess)
  • 2 tbsp Olive oil
  • Juice of ½ Lemon
  • Salt and pepper to taste
  • Fresh dill, parsley, or basil for garnish
  • Chili flakes (optional for some heat)

Instructions

  1. Bring a large pot of salted water to a boil and add the spaghetti. Cook according to package instructions until al dente (about 8-10 minutes). Be sure to reserve about 100 ml of pasta water before draining the spaghetti.
  2. While the spaghetti is cooking, heat 2 tbsp of olive oil in a large pan over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.
  3. Add the chopped garlic to the pan and sauté for about 1 minute until fragrant, being careful not to burn it as it can become bitter.
  4. Add the shrimp to the pan and sauté for 2-3 minutes until they are pink and cooked through. This is a good time to drizzle the shrimp with the juice of ½ lemon. Remove the shrimp from the pan and set aside.
  5. In the same pan, add the cream cheese, vegetable broth, and cream (if using). Stir everything well until a smooth sauce forms, which should take about 2-3 minutes.
  6. Season the sauce with salt, pepper, and optional chili flakes. If the sauce is too thick, gradually add some of the reserved pasta water until the desired consistency is reached.
  7. Return the drained spaghetti and shrimp to the pan. Mix everything well and heat briefly until everything is evenly warmed through (about 2 minutes).
  8. Serve the spaghetti immediately, garnished with fresh herbs like dill, parsley, or basil.
