Ingredients

Scale
  • 600 g chicken breast fillets
  • 1 tbsp olive oil
  • 1 tsp butter
  • 2 garlic cloves, finely chopped
  • 150 g heavy cream
  • 100 g cream cheese (double cream level)
  • 50 g freshly grated Parmesan
  • 100 g grated mozzarella
  • 1 tsp sweet paprika powder
  • ½ tsp dried oregano
  • Salt and freshly ground pepper
  • 1 bunch spring onions, sliced
  • 200 g cherry tomatoes, halved
  • Optional: chili flakes for a slight heat

Instructions

  1. Preheat the oven to 200°C (upper and lower heat). This ensures even cooking and a nice browning of the cheese crust.
  2. Heat 1 tbsp of olive oil and 1 tsp of butter in a large pan over medium heat. Wait until the oil is hot but not smoking to avoid burning.
  3. Add the 600 g chicken breast fillets and fry for 4-5 minutes on each side until golden brown. Make sure not to fry the chicken too long to keep it juicy.
  4. Remove the chicken fillets from the pan and place them in a baking dish. The heat in the pan should now be reduced.
  5. Add 2 finely chopped garlic cloves to the pan and sauté for 1-2 minutes until fragrant. Be careful not to burn them, as they will become bitter.
  6. Reduce the heat and add 150 g heavy cream and 100 g cream cheese to the pan. Stir well until the cream cheese has melted and a creamy sauce forms.
  7. Add 50 g freshly grated Parmesan, 100 g grated mozzarella, 1 tsp sweet paprika powder, ½ tsp dried oregano, and salt and pepper to taste. Stir until the cheese is completely melted.
  8. Pour the creamy sauce evenly over the chicken fillets in the baking dish.
  9. Sprinkle 1 bunch of sliced spring onions and 200 g halved cherry tomatoes over the chicken. This adds freshness and color.
  10. Bake the dish in the preheated oven for 25-30 minutes until the cheese crust is golden brown and the chicken is cooked through. You can check with a thermometer to ensure the chicken reaches an internal temperature of 75°C.
  11. Remove the oven chicken from the oven and let it rest for 5 minutes before serving. This helps keep the juices in the meat, making it more tender.

Keywords: Avoid overcooking the chicken to prevent it from drying out. Use freshly grated cheese instead of pre-packaged for better melting and flavor. You can experiment with different herbs like thyme or basil for a personal touch.
