Simple Baked French Onion Gnocchi

  • 1 lb gnocchi (fresh or frozen)
  • 1 large sweet onion (thinly sliced)
  • 810 slices French bread (preferably day-old)
  • 1 cup grated Swiss cheese or Gruyère cheese (preferably Gruyère for a deeper flavor)

Instructions

  1. Preheat the oven to 200 degrees Celsius.
  2. In a large skillet, heat 1 tablespoon of olive oil and 1 tablespoon of unsalted butter over medium heat until the butter is melted and lightly foaming.
  3. Add the thinly sliced sweet onion and cook, stirring frequently, for about 10-15 minutes until golden brown and caramelized.
  4. Add the white wine and let it simmer for 2-3 minutes until the liquid is reduced by half.
  5. Stir in the beef broth, fresh thyme, salt, and pepper, and let the mixture simmer for another 5 minutes to combine the flavors.
  6. Meanwhile, bring a separate pot of water to a boil. Cook the gnocchi according to the package instructions (about 2-3 minutes for fresh gnocchi, 3-5 minutes for frozen) until they float to the surface. Drain and set aside.
  7. Add the cooked gnocchi to the skillet with the onion-broth mixture and gently stir until they are evenly coated.
  8. Spread the mixture evenly in a baking dish and top with the slices of French bread. You can lightly toast the bread beforehand for a crispier texture.
  9. Sprinkle the grated Gruyère cheese evenly over the bread and gnocchi. Bake for 15-20 minutes until the cheese is golden brown and bubbling.
  10. After baking, let the dish rest for 5 minutes before serving to allow the flavors to settle.
