Instructions

  1. Begin by separating the eggs. Whip the egg whites in a clean bowl with a hand mixer on high speed until stiff peaks form, about 5-7 minutes. Ensure no yolk gets into the egg whites.
  2. In a separate bowl, mix the flour, sugar, baking powder, and salt. Combine these dry ingredients well to avoid lumps.
  3. In another bowl, whisk the egg yolks, milk, and vanilla extract until well combined, about 2 minutes.
  4. Add the liquid ingredients to the dry ingredients and gently mix until a smooth batter forms. Avoid overmixing to maintain the texture.
  5. Fold the whipped egg whites into the batter in two portions using a spatula, being careful to maintain the fluffy texture.
