- 1 cup green or brown lentils (cooked)
- 1/2 cup walnuts (chopped)
- 1 large onion (diced)
- 2 cloves garlic (chopped)
- 1 red bell pepper (diced)
- 1 teaspoon cumin
- 1/2 teaspoon paprika (sweet)
- 1/4 teaspoon cayenne pepper (optional)
- 1 teaspoon tomato paste
- 1/2 cup vegetable broth
- 1 tablespoon olive oil
- Salt and pepper to taste
- 4 large tortillas (whole grain or as preferred)
- 1 avocado (sliced)
- 1 cup fresh salad (e.g., Romaine or iceberg)
- 1/2 cup grated cheddar (optional, for a vegetarian version)
- 1/2 cup natural yogurt or plant-based cream (for a creamy effect)
- 1 lime (cut into wedges)
- Rinse the lentils in a sieve and bring to a boil in a pot with 2 cups of water. Simmer for about 20-25 minutes until soft, then drain and set aside.
- In a large pan, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until soft and lightly browned.
- Add the chopped garlic and diced red bell pepper to the pan. Sauté for another 3-4 minutes until the vegetables are soft and fragrant.
- Add the cooked lentils, chopped walnuts, cumin, paprika, cayenne pepper, tomato paste, and vegetable broth to the pan. Stir well and simmer for about 5-7 minutes until everything is well combined and heated through. Season with salt and pepper to taste.
- Warm the tortillas slightly, either in a pan or in the microwave, to make them more flexible.
- On each tortilla, place a portion of the lentil-walnut mixture, followed by some avocado slices and fresh salad. Optionally, you can also add grated cheddar and a spoonful of natural yogurt.
- Carefully roll the tortillas by folding in the sides and rolling from the bottom up. Make sure the filling does not fall out.
- The burritos can be served immediately, or you can grill them in a grill pan for 2-3 minutes on each side until golden brown and crispy.
