Hearty Stew with Potatoes and Sausages Recipe

  • 450 g potatoes (waxy)
  • 3 carrots
  • 1 small leek
  • 1 red onion
  • 3 cloves garlic
  • 250 g canned broad beans
  • 1 red bell pepper
  • 4 Krakauer sausages
  • 150 g cream cheese (light)
  • 250 ml cream
  • 600 ml vegetable broth (no additives)
  • 3 tsp flour
  • 1 handful fresh parsley
  • 2 tbsp olive oil
  • Salt
  • Pepper
  • Nutmeg

Instructions

  1. Prepare the potatoes: Peel and cut the potatoes into 0.5 cm cubes, ensuring they are evenly sized for uniform cooking.
  2. Cut the vegetables: Peel and slice the carrots thinly, dice the bell pepper, finely chop the onion, and peel the garlic cloves.
  3. Prepare the sausages: Slice the Krakauer sausages. Halve the leek lengthwise, wash it, and slice it thinly. Drain the broad beans.
  4. Sauté the sausages: Heat olive oil in a large pan or pot and fry the sausage slices for about 5 minutes until golden brown, being careful not to overcook them.
  5. Add the vegetables: Add the onion, bell pepper, potatoes, and carrots to the pan and sauté for another 5 minutes until the vegetables are lightly browned and fragrant.
  6. Add garlic and leek: Press in the garlic and add the leek and broad beans to the pan. Stir everything well.
  7. Add flour: Sprinkle the flour over the vegetables and briefly sauté until it turns lightly golden, which will help thicken the sauce later.
  8. Add liquid: Deglaze with the cream and vegetable broth. Bring the mixture to a boil, then reduce the heat and let it simmer covered for about 20-30 minutes until the potatoes and carrots are tender.
  9. Add spices and cheese: Stir in the cream cheese, salt, pepper, and a pinch of nutmeg. Mix well until the cheese is melted and the sauce is creamy.
  10. Add parsley: Chop the parsley and add it as well. Taste and adjust seasoning if necessary. Serve hot.
