- 450 g potatoes (waxy)
- 3 carrots
- 1 small leek
- 1 red onion
- 3 cloves garlic
- 250 g canned broad beans
- 1 red bell pepper
- 4 Krakauer sausages
- 150 g cream cheese (light)
- 250 ml cream
- 600 ml vegetable broth (no additives)
- 3 tsp flour
- 1 handful fresh parsley
- 2 tbsp olive oil
- Salt
- Pepper
- Nutmeg
- Prepare the potatoes: Peel and cut the potatoes into 0.5 cm cubes, ensuring they are evenly sized for uniform cooking.
- Cut the vegetables: Peel and slice the carrots thinly, dice the bell pepper, finely chop the onion, and peel the garlic cloves.
- Prepare the sausages: Slice the Krakauer sausages. Halve the leek lengthwise, wash it, and slice it thinly. Drain the broad beans.
- Sauté the sausages: Heat olive oil in a large pan or pot and fry the sausage slices for about 5 minutes until golden brown, being careful not to overcook them.
- Add the vegetables: Add the onion, bell pepper, potatoes, and carrots to the pan and sauté for another 5 minutes until the vegetables are lightly browned and fragrant.
- Add garlic and leek: Press in the garlic and add the leek and broad beans to the pan. Stir everything well.
- Add flour: Sprinkle the flour over the vegetables and briefly sauté until it turns lightly golden, which will help thicken the sauce later.
- Add liquid: Deglaze with the cream and vegetable broth. Bring the mixture to a boil, then reduce the heat and let it simmer covered for about 20-30 minutes until the potatoes and carrots are tender.
- Add spices and cheese: Stir in the cream cheese, salt, pepper, and a pinch of nutmeg. Mix well until the cheese is melted and the sauce is creamy.
- Add parsley: Chop the parsley and add it as well. Taste and adjust seasoning if necessary. Serve hot.

Keywords: To avoid mushy potatoes, monitor their cooking time closely; they should remain slightly firm. A heavy pot ensures even heat distribution, and you can adjust the vegetable quantities based on your preference.
