  • 1/4 cup unsalted butter, melted
  • 1/4 cup olive oil
  • 1 packet (1 ounce) ranch seasoning mix
  • 1 teaspoon garlic powder

  • 1/2 teaspoon smoked paprika (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese (sharp or mild, based on preference)
  • 1/2 cup crumbled bacon (optional)
  • 1/4 cup sliced green onions (for garnish)
  • 1/4 cup sour cream (for serving, optional)

Instructions

  1. Preheat your oven to 200 °C (400 °F). Wash the potatoes thoroughly and dry them. Place each potato on a cutting board and slice them into even, thin slices, but not all the way through (about 2/3 of the thickness), so they stay together at the bottom. This should take about 10-15 minutes.
  2. In a small bowl, mix the melted butter, olive oil, ranch seasoning mix, garlic powder, onion powder, paprika, salt, and pepper well. This mixture adds flavor and helps the potatoes brown nicely. Mixing should take about 5 minutes.
  3. Place the sliced potatoes on a baking sheet. Use a brush or a spoon to evenly coat the potatoes with the butter-oil mixture. Make sure the mixture gets between the cuts as well. This should take about 5 minutes.
  4. Bake the potatoes in the preheated oven for 40-50 minutes. They are done when they are golden brown and can be easily pierced with a fork. Check them after 30 minutes to ensure they are cooking evenly, and turn them if necessary.
  5. After baking, remove the potatoes from the oven and sprinkle the shredded cheddar cheese and optional bacon evenly over the potatoes. Return the baking sheet to the oven for another 5-10 minutes until the cheese is melted and slightly golden brown.
  6. Remove the potatoes from the oven and garnish with sliced green onions. Serve warm with a dollop of sour cream if desired. This should take about 5 minutes.
