- 300 g ground beef
- 1 onion
- 4 tablespoons tomato paste
- 2 tablespoons butter
- 2 tablespoons oil
- 200 ml water
- 2 teaspoons sweet paprika
- 1 teaspoon oregano
- Salt and pepper
- 300 g 3.5% yogurt
- 2 cloves garlic
- 1 teaspoon salt
- Peel the potatoes and cut them into approximately 2 cm cubes, ensuring the pieces are uniform for even cooking.
- Soak the cut potatoes in cold water for 5 minutes to help remove starch and improve crispiness.
- Drain the potatoes and lay them on a kitchen towel to dry thoroughly, which is important to avoid splattering when frying.
- Heat enough oil in a pot over medium to high heat, aiming for an optimal temperature of about 180°C.
- Fry the potatoes for about 15-20 minutes until they are golden brown and crispy, stirring occasionally for even browning.
- While the potatoes are frying, peel the garlic cloves and press them into a bowl with the yogurt. Add 1 teaspoon of salt and mix well.
- Peel the onion and chop it finely.
- Heat 2 tablespoons of oil in a pan and crumble the ground beef over medium heat, cooking for about 5 minutes.
- Add the chopped onion and sauté with the beef until translucent.
- Stir in the tomato paste, butter, paprika, oregano, salt, pepper, and water. Mix well and let everything simmer together for 2 minutes.
- Once the potatoes are done, place them on a plate, drizzle the yogurt over them, and spoon the meat sauce on top.
- Garnish with chopped parsley and serve immediately to enjoy the crispiness of the potatoes.
