Crispy Potatoes with Ground Meat and Yogurt

This dish features perfectly crispy potatoes paired with savory ground meat and a refreshing yogurt topping. It’s a comforting meal that brings warmth and joy to any dinner table.

  • 1.5 kg potatoes (waxy)
  • 3 tablespoons parsley (chopped)
  • Oil for frying
  • 300 g ground beef
  • 1 onion
  • 4 tablespoons tomato paste
  • 2 tablespoons butter
  • 2 tablespoons oil
  • 200 ml water
  • 2 teaspoons sweet paprika
  • 1 teaspoon oregano
  • Salt and pepper
  • 300 g 3.5% yogurt
  • 2 cloves garlic
  • 1 teaspoon salt

Instructions

  1. Peel the potatoes and cut them into approximately 2 cm cubes, ensuring the pieces are uniform for even cooking.
  2. Soak the cut potatoes in cold water for 5 minutes to help remove starch and improve crispiness.
  3. Drain the potatoes and lay them on a kitchen towel to dry thoroughly, which is important to avoid splattering when frying.
  4. Heat enough oil in a pot over medium to high heat, aiming for an optimal temperature of about 180°C.
  5. Fry the potatoes for about 15-20 minutes until they are golden brown and crispy, stirring occasionally for even browning.
  6. While the potatoes are frying, peel the garlic cloves and press them into a bowl with the yogurt. Add 1 teaspoon of salt and mix well.
  7. Peel the onion and chop it finely.
  8. Heat 2 tablespoons of oil in a pan and crumble the ground beef over medium heat, cooking for about 5 minutes.
  9. Add the chopped onion and sauté with the beef until translucent.
  10. Stir in the tomato paste, butter, paprika, oregano, salt, pepper, and water. Mix well and let everything simmer together for 2 minutes.
  11. Once the potatoes are done, place them on a plate, drizzle the yogurt over them, and spoon the meat sauce on top.
  12. Garnish with chopped parsley and serve immediately to enjoy the crispiness of the potatoes.
