Ingredients

Scale
  • 4 cups green cabbage, finely shredded (about half a medium head of cabbage)
  • 2 cups carrots, grated (about 23 medium carrots)
  • 1 cup red cabbage, finely shredded (optional, for color)
  • 1/2 cup red bell pepper, thinly sliced
  • 1/4 cup green onions, chopped
  • 1/4 cup fresh parsley, chopped (optional)
  • 1 cup plain Greek yogurt
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey or maple syrup (to taste)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon lemon juice (freshly squeezed)

Instructions

  1. Prepare all ingredients: Wash the green and red cabbage as well as the carrots thoroughly. Peel the carrots and cut them into fine shreds. This should take about 5 minutes.
  2. Cut the green and red cabbage into fine strips. Make sure to shred the leaves well so they mix evenly. This should take about 5 minutes.
  3. In a large bowl, combine the shredded cabbage, grated carrots, red bell pepper strips, chopped green onions, and parsley (if using). Mix everything thoroughly until well combined. This should take about 2 minutes.
  4. In a separate bowl, prepare the yogurt dressing. Mix the Greek yogurt, apple cider vinegar, Dijon mustard, honey (or maple syrup), garlic powder, onion powder, lemon juice, and salt and pepper. Stir well until it forms a homogeneous mixture. This should take about 3 minutes.
  5. Pour the dressing over the vegetable mixture and mix well to ensure the dressing is evenly distributed. This should take about 3 minutes.
  6. Taste the salad and adjust the seasoning as desired. Let the salad rest in the refrigerator for at least 10 minutes to allow the flavors to meld. This is important for a fresh and flavorful taste.
  7. Serve the slaw as a side dish or main course. Be sure to mix it well before plating. The salad should be fresh and crunchy when served.

Nutrition

Keywords: Ensure the cabbage is finely shredded for a pleasant texture. Use a large bowl for mixing to allow enough space for the ingredients to combine well. If preparing the dressing in advance, stir it well before serving as ingredients may settle. Avoid adding the dressing too early to maintain the freshness of the ingredients. Feel free to adjust the ingredient ratios to suit your taste preferences.
