Delicious Spinach and Feta Puff Pastry Sticks – Easy Recipe!

These Spinach and Feta Puff Pastry Sticks are a delightful combination of crispy pastry and savory filling. Perfect for snacks, parties, or a cozy night in, they are quick and easy to make!

  • 1 sheet of puff pastry (thawed if frozen, about 250g)
  • 200g fresh spinach (or 150g frozen spinach, thawed and drained)
  • 150g feta cheese, crumbled
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 large egg (for egg wash)
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt (adjust to taste)
  • Optional: sesame seeds or poppy seeds for sprinkling

Instructions

  1. Preheat your oven to 200°C (fan oven) so it's nice and hot when the sticks go in.
  2. If using fresh spinach, wash it thoroughly and chop it roughly. If using frozen spinach, thaw it and squeeze out the excess water.
  3. In a pan, heat 2 tablespoons of olive oil over medium heat. Add the finely chopped onion and sauté for about 3-4 minutes until soft and lightly golden.
  4. Add the minced garlic to the onion in the pan and sauté for another minute until fragrant.
  5. Now add the spinach to the pan. Sauté for about 2-3 minutes until it has wilted. Remove the pan from the heat and let the mixture cool slightly.
  6. In a large bowl, mix the spinach-onion mixture with the crumbled feta, dried oregano, black pepper, and salt. Make sure everything is well combined.
  7. Roll out the puff pastry on a lightly floured surface and cut it into about 6 equal rectangles.
  8. Spoon some of the spinach-feta filling onto the center of each rectangle, making sure to leave the edges clear so you can seal the sticks well.
  9. Beat the large egg in a small bowl and brush the edges of the puff pastry rectangles with the egg. Fold the rectangles over and press the edges with a fork to seal them.
  10. Place the filled sticks on a baking sheet lined with parchment paper. Brush the tops of the sticks with the remaining egg and optionally sprinkle sesame or poppy seeds on top.
  11. Bake the sticks in the preheated oven for 20-25 minutes until golden brown and crispy. Let them cool slightly before serving.
