Ingredients

Scale
  • 2 boneless, skinless chicken breasts (about 1 pound total)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup all-purpose flour
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • ½ cup buffalo sauce (store-bought or homemade)
  • 2 tablespoons unsalted butter, melted
  • ½ cup mayonnaise
  • ¼ cup buttermilk
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried dill
  • 1 teaspoon dried parsley
  • Salt and black pepper to taste
  • 4 sandwich rolls (brioche, ciabatta, or your choice)
  • 1 cup shredded lettuce
  • 1 medium tomato, sliced (optional)
  • ½ cup sliced pickles (optional)
  • Sliced jalapeños (optional for extra heat)

Instructions

  1. Preheat your oven to 200 °C and line a baking sheet with parchment paper.
  2. In a bowl, mix the flour, garlic powder, onion powder, smoked paprika, salt, and black pepper. This mixture will coat the chicken breasts.
  3. In a second bowl, crack the eggs and whisk them well. This will serve as the adhesive for the breading.
  4. In a third bowl, prepare the panko breadcrumbs. You can season them with a bit of extra salt and pepper to enhance the flavor.
  5. Coat the chicken breasts first in the flour mixture, then dip them in the egg, and finally roll them in the panko breadcrumbs until fully covered. Ensure all sides are well coated.
  6. Place the breaded chicken breasts on the prepared baking sheet and brush them with melted butter. This helps promote browning and makes the breadcrumbs crispy.
  7. Bake the chicken breasts for about 20-25 minutes until golden brown and cooked through. You can check this with a meat thermometer; the inside should reach at least 75 °C.
  8. Meanwhile, combine the ranch dressing ingredients in a bowl: mayo, buttermilk, lemon juice, garlic powder, onion powder, dill, parsley, salt, and pepper. Mix well until the mixture is homogeneous.
  9. Once the chicken is done, remove it from the oven and let it rest briefly before assembling the sandwich.
  10. Slice the sandwich rolls and spread ranch dressing on them as desired. Layer the chicken, lettuce, tomato slices, pickles, and jalapeños, then close the sandwich.

Keywords: A common mistake is overcooking the chicken. Use a meat thermometer to ensure it's perfectly cooked. You can also experiment with the ratio of buffalo sauce to butter for desired spiciness.
