Delicious Tiger Bread Recipe: Perfectly Homemade Tiger Rolls!

  • 1 tsp Instant yeast (Active dry yeast 1 and 1/4 tsp)

  • 42.6 g Butter (3 tbsp)
  • 1 tbsp Sugar or honey (or more according to your preference)
  • 30 g Rice flour (3 tbsp)
  • 38 ml Water (or 2 and 1/2 tbsp)
  • A pinch of Salt
  • 6.5 g Sugar (or 1/2 tbsp)
  • 1.5 g Yeast (or 1/4 tsp)
  • 7.5 ml Oil (or 1/2 tbsp)

Instructions

  1. In a large bowl, combine 357 g flour, 1 tsp salt, and 1 tbsp sugar. This ensures even distribution of the dry ingredients. (about 5 minutes)
  2. In a separate container, mix 210 ml warm water and 1 tsp instant yeast. Let it sit for 5 minutes until it foams. This shows that the yeast is active.
  3. Add the yeast-water mixture to the flour mixture and add 42.6 g melted butter. Mix with a wooden spoon or by hand until a rough dough forms. (about 10 minutes)
  4. Place the dough on a lightly floured surface and knead for 10 minutes until smooth and elastic. If the dough is too sticky, add a little more flour.
  5. Put the dough in an oiled bowl and cover with a damp cloth. Let it rise in a warm place for 1 hour until it has doubled in size.
  6. After rising, place the dough on a lightly floured surface and divide it into two equal portions. (about 5 minutes)
  7. Shape each dough portion into a round shape and place on a baking sheet lined with parchment paper. Let it rise covered for another 30 minutes.
  8. Meanwhile, prepare the tiger crust: mix 30 g rice flour, 38 ml water, a pinch of salt, 1.5 g yeast, and 6.5 g sugar in a small bowl. The mixture should form a thick paste. (about 10 minutes)
  9. Spread the tiger paste evenly over the surface of the rolls and preheat the oven to 220°C.
  10. Bake the tiger rolls in the preheated oven for 20-25 minutes until golden brown and the crust looks crispy. (Be careful not to bake them too long to avoid drying out.)
  11. Remove the rolls from the oven and let them cool on a wire rack. (about 10 minutes)
