Oven-Fresh Zucchini Fritters with Herb Magic

These oven-baked zucchini fritters are a delightful and healthy alternative to traditional fried versions. With their crispy exterior and juicy interior, they make for a perfect snack or side dish.

  • 500 g zucchini, coarsely grated
  • 1 small onion, finely chopped
  • 1 egg
  • 100 g flour
  • 50 g parmesan, grated (optional)
  • Salt and pepper, to taste
  • Oil for the baking sheet (e.g., olive oil)

Instructions

  1. Preheat the oven to 200 degrees Celsius.
  2. Grate the zucchini coarsely and place it in a clean kitchen towel. Squeeze the zucchini well to remove excess moisture.
  3. In a large bowl, mix the grated zucchini with the finely chopped onion. Add the egg and stir everything well.
  4. Add the flour, salt, and pepper to the zucchini mixture and mix thoroughly until a homogeneous mass forms. If desired, stir in the parmesan.
  5. Line a baking sheet with parchment paper and lightly drizzle it with oil.
  6. Form small fritters (about 2-3 cm thick) from the zucchini mixture and place them on the baking sheet, leaving enough space between them for even cooking.
  7. Bake the zucchini fritters in the preheated oven for about 25 minutes, flipping them halfway through for even browning. They are done when golden brown and crispy.
  8. After baking, let the fritters cool slightly and serve warm. They taste excellent with a yogurt dip or homemade herb cream.
