Ingredients

Scale
  • 1 sheet of frozen puff pastry, thawed (approximately 1/2 pound or 225 grams)
  • 1/2 cup basil pesto (store-bought or homemade)
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded mozzarella cheese (about 4 ounces or 115 grams)
  • 1/4 cup grated Parmesan cheese (about 1 ounce or 30 grams)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste
  • 1 egg, beaten (for egg wash)
  • Sesame seeds or poppy seeds (optional, for garnish)

Instructions

  1. Preheat the oven to 200 °C (390 °F). This ensures that the puff pastry bakes evenly and crisply.
  2. Line a baking sheet with parchment paper to prevent the pastry bites from sticking.
  3. Roll out the thawed puff pastry on a lightly floured surface if necessary, ensuring the dough is evenly thick.
  4. Cut the puff pastry into even squares of about 10 cm x 10 cm to help with folding and filling the bites.
  5. In a bowl, mix the basil pesto, halved cherry tomatoes, shredded mozzarella, Parmesan, garlic powder, oregano, salt, and pepper well, ensuring everything is evenly distributed.
  6. Place a tablespoon of the filling in the center of each pastry square, avoiding overfilling to prevent spilling during baking.
  7. Fold the corners of the pastry square towards the center to create a package. Press the edges together with a fork to seal the filling inside.
  8. Place the filled pastry bites on the baking sheet and brush the top of each bite with the beaten egg for a nice golden color when baked.
  9. Optional: Sprinkle sesame or poppy seeds over the pastry bites for added flavor and visual appeal.
  10. Bake the bites in the preheated oven for about 15-20 minutes or until they are golden brown and puffed up. Make sure they don’t get too dark for the perfect crunch.
  11. Remove the bites from the oven and let them cool briefly before serving. They taste best warm!

Keywords: Avoid overworking the puff pastry to keep it light and airy. Use a baking mat or silicone baking sheet to prevent sticking and make cleanup easier. Measure the filling carefully to prevent overflow; one tablespoon per pastry is usually sufficient. For a more intense flavor, you can add fresh herbs like thyme or basil to the filling. If you prefer not to use eggs for the egg wash, you can use milk or a plant-based milk alternative for a nice browning effect.
