  • 1 cup green beans, trimmed and cut into 1-inch pieces
  • 1 cup peas (fresh or frozen)
  • 1 tablespoon fresh parsley, chopped (for garnish)
  • 1 tablespoon fresh dill, chopped (for garnish; optional)
  • Juice of 1 lemon (optional, for brightness)

Instructions

  1. Heat the olive oil in a large pot over medium heat. Wait about 1-2 minutes until the oil is hot but not smoking.
  2. Add the diced onion and sauté for about 5 minutes until soft and translucent. Be careful not to burn it.
  3. Add the minced garlic and sauté for another 1-2 minutes until fragrant. Avoid cooking the garlic too long as it can become bitter.
  4. Add the carrots and celery and cook for about 5 minutes until slightly softened.
  5. Pour the chicken broth into the pot and bring it to a boil. This should take about 3-4 minutes.
  6. Reduce the heat and add the shredded chicken, thyme, rosemary, and bay leaf. Let the soup simmer on low heat for 10 minutes to allow the flavors to meld.
  7. Add the egg noodles and cook for about 6-8 minutes until al dente. Stir occasionally to prevent sticking.
  8. Add the green beans and peas and cook for another 3-5 minutes until tender.
  9. Season the soup with salt, pepper, and lemon juice. Remove the bay leaf before serving.
