Ingredients

Scale
  • 4 slices farmhouse bread (about 2.5 cm thick)
  • 2 tablespoons olive oil
  • 2 cloves garlic, chopped
  • 225 grams fresh mushrooms (e.g., cremini or button), cleaned and sliced
  • 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
  • Salt and pepper to taste
  • 1 tablespoon balsamic vinegar (optional)
  • 225 grams cream cheese, softened
  • 1/2 cup grated Gruyère cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon fresh parsley, chopped (for garnish)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • Additional fresh parsley for garnish
  • Fresh arugula or mixed salad greens (optional)

Instructions

  1. Preheat the oven to 200 °C.
  2. Heat the olive oil in a pan over medium heat. After about 1-2 minutes, the edges of the oil should start to bubble slightly.
  3. Add the chopped garlic and sauté for about 30 seconds until fragrant, being careful not to burn the garlic.
  4. Add the sliced mushrooms to the pan and stir well. Cook for about 5-7 minutes until they are golden brown and soft.
  5. Add fresh thyme, salt, pepper, and optional balsamic vinegar. Stir well and cook for another 2 minutes until everything is well combined and slightly caramelized.
  6. In a bowl, combine the cream cheese, grated Gruyère cheese, Parmesan, garlic powder, and black pepper. This should create a creamy, homogeneous mixture.
  7. Place the slices of bread on a baking sheet and evenly spread the cheese mixture on top, ensuring it reaches the edges to prevent overflow.
  8. Evenly distribute the mushroom mixture over the cheese to ensure the toasts look well-filled.
  9. Bake the toasts in the preheated oven for 10-12 minutes until the cheese is melted and lightly golden. You should hear a delicious bubbling sound as the cheese melts.
  10. Remove the toasts from the oven and garnish with fresh parsley. Serve warm with arugula or mixed salad greens.

Nutrition

Keywords: Avoid overcrowding the mushrooms when sautéing to ensure they brown properly. Use a good non-stick or cast-iron pan to prevent sticking. Adjust the cheese ratio for a creamier texture, and ensure the cream cheese is soft for easy mixing. A pinch of nutmeg in the cheese mixture adds an aromatic kick.
