- 1 package (14 oz / 400 g) of frozen puff pastry (thawed)
- 1 egg (for egg wash)
- 1 tablespoon granulated sugar (for sprinkling)
- 2 cups (500 ml) whole milk
- 1/2 cup (100 g) granulated sugar
- 3 large egg yolks
- 1/4 cup (30 g) cornstarch
- 2 teaspoons vanilla extract
- 2 tablespoons unsalted butter
- 2 cups (300 g) fresh strawberries (sliced)
- 1 tablespoon apricot jam (for glazing, optional)
- Mint leaves (for garnish, optional)
- Preheat the oven to 200 °C.
- Roll out the thawed puff pastry on a lightly floured surface until about 3 mm thick.
- Place the puff pastry in a greased baking dish and press it down lightly.
- Trim any excess pastry that hangs over the edges of the dish.
- Prick the pastry with a fork to prevent it from puffing up while baking.
- Beat the egg in a small bowl and brush it over the pastry. Sprinkle the sugar evenly on top.
- Bake the puff pastry in the preheated oven for 15-20 minutes, until golden brown and crispy.
- While the pastry is baking, prepare the vanilla cream. Heat the milk in a saucepan over medium heat until warm but not boiling.
- In a separate bowl, whisk together the egg yolks, sugar, and cornstarch until smooth.
- Slowly pour the warm milk into the egg yolk mixture, stirring constantly to prevent curdling.
- Return the mixture to the saucepan and cook, stirring constantly, until it thickens (about 5-7 minutes).
- Remove the saucepan from heat and stir in the vanilla and butter until fully melted.
- Once the puff pastry is done, let it cool slightly. Then evenly spread the vanilla cream over the pastry.
- Distribute the sliced strawberries evenly over the vanilla cream.
- Optional: Warm the apricot jam and lightly glaze the strawberries for shine.
- Garnish with fresh mint leaves for an additional pop of color and flavor.
