Quick Strawberry Non-Alcoholic Beerkuchen with Vanilla Cream

This delightful dessert combines flaky puff pastry with a rich vanilla cream and fresh strawberries, creating a sweet treat perfect for any occasion. Easy to make and alcohol-free, it’s a comforting slice of home.

  • 1 package (14 oz / 400 g) of frozen puff pastry (thawed)
  • 1 egg (for egg wash)
  • 1 tablespoon granulated sugar (for sprinkling)
  • 2 cups (500 ml) whole milk
  • 1/2 cup (100 g) granulated sugar
  • 3 large egg yolks
  • 1/4 cup (30 g) cornstarch
  • 2 teaspoons vanilla extract
  • 2 tablespoons unsalted butter
  • 2 cups (300 g) fresh strawberries (sliced)
  • 1 tablespoon apricot jam (for glazing, optional)
  • Mint leaves (for garnish, optional)

Instructions

  1. Preheat the oven to 200 °C.
  2. Roll out the thawed puff pastry on a lightly floured surface until about 3 mm thick.
  3. Place the puff pastry in a greased baking dish and press it down lightly.
  4. Trim any excess pastry that hangs over the edges of the dish.
  5. Prick the pastry with a fork to prevent it from puffing up while baking.
  6. Beat the egg in a small bowl and brush it over the pastry. Sprinkle the sugar evenly on top.
  7. Bake the puff pastry in the preheated oven for 15-20 minutes, until golden brown and crispy.
  8. While the pastry is baking, prepare the vanilla cream. Heat the milk in a saucepan over medium heat until warm but not boiling.
  9. In a separate bowl, whisk together the egg yolks, sugar, and cornstarch until smooth.
  10. Slowly pour the warm milk into the egg yolk mixture, stirring constantly to prevent curdling.
  11. Return the mixture to the saucepan and cook, stirring constantly, until it thickens (about 5-7 minutes).
  12. Remove the saucepan from heat and stir in the vanilla and butter until fully melted.
  13. Once the puff pastry is done, let it cool slightly. Then evenly spread the vanilla cream over the pastry.
  14. Distribute the sliced strawberries evenly over the vanilla cream.
  15. Optional: Warm the apricot jam and lightly glaze the strawberries for shine.
  16. Garnish with fresh mint leaves for an additional pop of color and flavor.
