  • 1 tablespoon brown sugar
  • 1 tablespoon granulated coffee
  • 12 tartlet shells
  • ¾ cup heavy cream (or whipping cream)
  • ¾ cup mascarpone cheese
  • ¼ cup powdered sugar (superfine sugar)
  • 1 ½ teaspoons vanilla extract

Instructions

  1. Begin with preparing the coffee ganache. Chop the dark chocolate into small pieces and place it in a heatproof bowl. This takes about 5 minutes.
  2. In a small saucepan, heat the heavy cream together with the brown sugar and granulated coffee over medium heat until the mixture is just about to boil. This takes about 5-7 minutes. Be careful not to let it boil!
  3. Pour the hot cream mixture over the chopped chocolate and let it sit for 2-3 minutes to allow the chocolate to melt. Stir the mixture well until smooth, which takes about 2 minutes.
  4. Evenly distribute the ganache into the tartlet shells and refrigerate for at least 30 minutes to set.
  5. While the ganache cools, prepare the cream mixture. Whip the heavy cream in a large bowl until soft peaks form, which takes about 3-4 minutes.
  6. In a separate bowl, mix the mascarpone, powdered sugar, and vanilla extract. Stir well until the mixture is homogeneous and creamy, about 2 minutes.
  7. Gently fold the whipped cream into the mascarpone mixture until well combined. Be careful not to lose the fluffiness of the cream.
  8. Evenly distribute the mascarpone cream over the chilled ganache and let the tartlets set in the refrigerator for another 30 minutes.
  9. Before serving, you can garnish the tartlets with cocoa powder or chocolate shavings as desired for an extra visual appeal.
