- 1 pack of pre-cooked udon noodles
- 2 carrots
- 1 broccoli
- 1 spring onion
- 250 ml coconut milk
- 200 ml water
- 100 g peanut butter
- Juice of half a lime
- Juice of half a lemon
- 4–5 tbsp soy sauce
- 2 tbsp chili sauce (e.g. Sriracha)
- 1 tbsp maple syrup
- 2 tbsp oil
- Divide the broccoli into small florets. This step should take about 5 minutes. Ensure the florets are evenly sized for even cooking.
- Peel the carrots, halve them, and cut them into thin strips using a vegetable peeler. This process takes about 5 minutes. Thin strips allow for quicker cooking and better texture.
- Slice the spring onion into rings. This should take no longer than 2 minutes. The rings add a nice freshness and color to the dish.
- Heat a wok or large pan over medium heat and add the oil. Wait about 1 minute until the oil is hot. You can see the oil shimmering when it's ready.
- Add the spring onions to the pan and sauté for about 1 minute until they are slightly translucent. Be careful not to burn them, as they can taste bitter.

- Add the lime and lemon juice to the sauce and stir again. Let the mixture simmer for 1-2 minutes. The acidity will enhance the flavors.
- Now add the udon noodles and chili sauce. Stir everything well and let it simmer covered for another 2 minutes. Ensure the noodles are well coated with the sauce.
- Taste the dish and adjust with additional soy sauce and chili sauce according to your personal preference. Serve hot and top with spring onions, sesame seeds, and chili oil as desired.
