  • 3 cloves garlic, chopped
  • 1 inch piece ginger, grated

  • 3 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon sesame oil
  • 1 teaspoon rice vinegar
  • 1 teaspoon honey or maple syrup (optional for sweetness)
  • 1/4 teaspoon red pepper flakes (optional, for heat)
  • Sesame seeds (optional, for garnish)
  • Fresh cilantro or basil (optional, for garnish)

Instructions

  1. Prepare the zucchini: Wash the zucchinis thoroughly and cut off the ends. Use a spiralizer to cut the zucchinis into noodles. Set the zucchini noodles aside. (Time: 10 minutes)
  2. Heat the olive oil in a large pan over medium heat. Make sure the oil is hot before adding the vegetables. (Time: 1-2 minutes)
  3. Add the chopped garlic and grated ginger to the pan and sauté for 30 seconds until fragrant. Avoid burning them as they can become bitter.
  4. Add the sliced red and yellow bell peppers and the julienned carrots to the pan. Sauté the vegetables for 3-4 minutes until they are slightly soft but still crisp.
  5. Add the sugar snap peas and sauté for another 2 minutes. They should remain bright green and crisp.
  6. Add the zucchini noodles to the pan and mix everything well. Sauté the mixture for another 2-3 minutes until the zucchini noodles are warm and slightly softened.
  7. In a small bowl, mix the soy sauce, sesame oil, rice vinegar, honey (if used), and red pepper flakes. Pour the mixture over the zucchini noodles and vegetables and stir well. Let it simmer for 1-2 minutes to combine the flavors.
  8. Serve the stir fry warm and garnish with green onions, sesame seeds, and fresh herbs if desired.
